Here is his story in his own words:
I was diagnosed with Type 1 Diabetes in 2004 after having just finished getting my Associates Degree in Graphic Design and Computer Animation. It hit me hard i had to change my eating habits, immediately. I was eating and drinking unimaginable quantities of Skittles, Mountain Dew, Quarts of Fried Rice, and Large Pizzas; that was actually what I ate on a daily basis. Since then I started to use the Insulin Pump and it had worked out for a time, but as I started working more and started doing more physical work my blood sugar was always getting to dangerous levels, my roommates had to call for the paramedics pretty frequently because I awoke with BG readings of LOW and in the 20s range. So I switched to taking the shots again 4 shots a day Novolin N and Apidra and so far I’ve done a lot better with keeping my sugars at a good level. I’ve started to change how much I eat and become more aware of what was healthy for me to eat and good for my diabetes. So after having to deal with Type 1 Diabetes for 5 years I am finally taking better care of myself. I am really excited to cook these recipes! Check your blood sugar often, David

I was so excited to hear that I won! That email from Mr. Garcia made my day. As soon as I got the book I went to the grocery store to get some food and finally cook something healthy for myself. I had been trying to find foods that were delicious and would help my A1C out big time, now I’m loving it. I’m starting to finally get into the groove of controlling my diabetes.
