Artichoke Dip | Diabetic Recipe

We found this diabetic recipe at Diabetic Gourmet via “The New American Heart Association CookbookHow can you describe this remarkable dip? Rich and irresistible comes to mind. Serve this at your next get together with a variety of crackers and/or fresh sliced vegetables and everyone will want to be on your guest list. They will always be asking for it at all of your parties and special events.

Ingredients

9 oz. package frozen no-salt-added artichoke hearts, thawed, drained

4 oz. fat-free or low-fat cream cheese, room temperature

½ cup plain nonfat or low-fat yogurt

¼ cup thinly sliced green onions (green part only)

1½ t. cream sherry

1 t. salt-free Italian herb seasoning

1/8 t. salt

Directions

1. Blot artichokes dry on paper towels. Chop into small pieces.

2. In medium bowl, whisk together remaining ingredients, blending well. Stir in artichokes.

3. Cover and refrigerate for at least 1 hour to allow flavors to blend.

4. Stir before serving.
