Mozzarella Pepperoni Bread | Diabetic Recipe

This is a wonderful tasty appetizer that you can find on page 11 and 12 of the “Taste of Home – easy cooking for diabetics” magazine. The important thing to remember here is that this is not on the “forbidden foods” list, as long as you adhere to your special dietary needs.

Ingredients

1 (1Lb.) Loaf French bread

3 T. butter, melted

3 Oz. Sliced Turkey pepperoni

1 ½ cups (6Oz.) shredded part-skim mozzarella cheese

3 T. minced fresh parsley

Directions

1.  Cut loaf of bread in half widthwise; cut into1 inch slices, leaving slices attached at bottom.

2.  Brush butter on both sides of each slice.

3.  Arrange pepperoni between slices and sprinkle with cheese and parsley.

4.  Place on ungreased baking sheet and bake at 350for 12 – 15 minutes or until cheese is melted.

Serving Size: 1 Slice

Nutritional Analysis: 91 calories, 4g fat, 12mg cholesterol, 229 mg sodium, 10g carbohydrate, 1g fiber, 5g protein.
